Courgette Scones

Recipe devised for Burpee Europe by chef Valerie Hamelin
Serves 4 – makes around 12 small scones or 8 medium-size ones

225g SR flour
1 tsp baking powder
50g butter
2 courgettes (Sure Thing) grated & drained (to remove excess water)
2 tbsp Parmesan cheese – grated (place some to the side for the top of scones before baking)
Chopped fresh chives
150ml milk
1 egg yolk to egg wash the scones
Salt & cracked pepper
1 jar of tomato chutney or smoked salmon or just butter
Pea shoots for garnish

Heat the oven to 200˚C, then in a bowl place the flour, baking powder and salt & pepper. Add the butter and rub with your fingertips until it forms large breadcrumbs. Add the parmesan cheese, the drained courgettes and the chopped chives. Mix in and pour the milk using a fork to bring the mix together.

On a clean work surface, pour the mix and roll it to 2cm thick using a (fluted) cutter.

Place the scones on a baking tray, brush with the egg yolk, place some grated parmesan cheese and bake for 10 to 12 minutes or until risen and golden brown.

To serve
Place the freshly bakes scones on a board with some smoked salmon, a jar of tomato chutney or simply a nice slice of butter.

Spicy Cauliflower & Bean Tacos with Pickled Red Onions

Recipe supplied by Dobbies

1 small head cauliflower, cut into small florets
3 tbsp vegetable oil
4 tsp smoked paprika
4 tsp ground cumin
2 cloves garlic, chopped
2 cans borlotti beans, drained and rinsed
1 tbsp honey
3 tbsp cider vinegar

For the pickled red onions:
150ml red wine vinegar
1 tbsp salt
1 tbsp caster sugar
2 medium red onions, sliced into half moons

To serve:
Warm corn or flour tortillas
Fresh coriander
Sliced green chillies
Chipotle hot sauce (Tabasco brand is good)

Preheat the oven to 220˚C, gas mark 7. To make the pickled red onions, heat the red wine vinegar in a small saucepan with 50ml water, the salt and sugar. Bring to the boil, then take off the heat. Add the onions and leave to cool to room temperature.

Put the cauliflower on a baking tray. Drizzle with 1 tbsp oil, sprinkle with 2 tsp each smoked paprika and cumin, and season with salt and pepper. Bake for 15-20 minutes until charred. Remove and set aside.

Meanwhile, in a large frying pan, heat the remaining 2 tbsp oil and the garlic. Sauté over a medium heat for 2-3 minutes until golden. Add the beans, remaining 2 tsp each smoked paprika and cumin, honey and cider vinegar and season with salt and pepper. Cook for another 5 minutes, then remove from heat.

When ready to eat, warm the tortillas and serve with bowls of the beans, pickled onions, coriander, chillies and hot sauce for people to help themselves.

Prawn & Parma Ham Skewers

Recipe from Consorzio del Prosciutto di Parma
Serves 4 | Prep 15 mins

16 large king prawns
16 slices of courgettes cut lengthwise
100g Parma Ham

For the marinade:
1 tsp of pink peppercorns in brine
Lime juice
Extra virgin olive oil
Mixed salad for serving


Marinade: crush the pepper, chop the chives and put them in a bowl with olive oil, lime juice and salt. Peel and devein the prawns, add them to the marinade and leave to rest for 2 hours in the refrigerator.

Drain the prawns from the marinade, wrap them in a courgette slice, then in a slice of Parma Ham and thread them in pairs onto small wooden skewers.

Heat the grid and grill the skewers turning them.

When ready, dress them with a dribble of oil to taste and a pinch of salt if needed. Serve the skewers with mixed salad.
